How to prepare cauliflower


Super Easy (raw) : Cut up and enjoy raw with some cold ranch dressing.

Moderate (roasted): Cut up a head of cauliflower into bite size pieces and spread them out on to a cookie sheet. Drizzle with olive oil and sprinkle salt, pepper and your favorite dried herbs to taste. Roast on the middle rack for approximately 40 minutes. You might be suprised at how much you can vary the taste by your choice of herbs. A dash of cumin and pepper flakes makes this side dish of roasted cauliflower perfect with some couscous and greek yougurt topped with paprika and cayenne pepper for a mediterranean style dinner. A dash of rosemary or thyme keeps it light and simple, but still delicious on the side with just about any dinner entree. For a sweeter approach you could also try using drizzling melted butter instead of olive oil and sprinkle some cinnamon, brown sugar and even a tiny hint of nutmeg. This also works well with apples and winter squash though it will be a few more months before either of those are in season.
